1

Bring 500 ml of full fat milk to a boil.

2

Once the milk starts boiling, turn off the flame and add 1 tbsp of lemon juice, stir it, and set aside for 5 minutes.

3

After 5 minutes, strain the mixture using a thin cloth to drain out the water.

4

Place a measuring cup and something heavy on top to ensure all the water is drained out.

5

Let the paneer cool completely for about 30 minutes.

6

Once cooled, add the paneer to a mixer jar to blend into a spreadable consistency.

7

Add 1 tbsp of whey from the paneer, 1 tbsp of pickled jalapeno juice, and a little salt to season.

8

Blend until smooth and thick, adding more whey if desired to thin it down.

9

Season with crushed black pepper, 1.5 tbsp of chopped jalapenos, and 1 tbsp of chopped coriander, and mix well.

10

Set the dip in the fridge for about 2 hours to ensure it sets properly.

11

Store the dip in an airtight container in the fridge.

12

Use leftover dip to make coleslaw by adding 2 tbsp each of shredded purple cabbage and white cabbage, and 2 tbsp of grated carrots, then mix well.

13

Butter some bread and add the coleslaw mixture as a filling, cover with another buttered bread slice.

14

Toast the sandwich on a hot tawa until golden brown.
