Vegetable oil is a cost-effective substitute for greasing.
Add active dry yeast to warm water along with a pinch of sugar; set aside for 3-4 minutes until it blooms.
In the bowl of a standing mixer, combine bread flour and salt.
Add granulated sugar and brown sugar to the flour mixture; crumple with fingers.
Once the yeast is foamy, add it to the flour mixture along with olive oil.
Mix on low speed, then increase to medium for 4-5 minutes until a smooth dough forms; do not add more water if it seems dry.
Transfer the dough to an oiled bowl, cover, and let rise in a warm place for about 1.5 hours until doubled in volume.
Flour the surface and deflate the risen dough; pat into a rectangle about 10x15 inches.
Cut the dough into strips and twist each strip once before placing on a parchment-lined baking sheet.
Cover the breadsticks and let them rest for 20-30 minutes to rise slightly.
Brush the tops with melted unsalted butter and sprinkle with a mixture of sea salt, granulated garlic, and Italian seasoning.
