Jamaican Steamed Bammy In Coconut Milk

Wash the whole chicken with salt, lemon juice, and vinegar.
Season the chicken with salt and black pepper.
Add garlic powder, onion powder, chicken seasoning, all-purpose seasoning, barbecue seasoning, paprika, allspice pimento seeds, ginger, and fresh garlic to the chicken.
Mix well to ensure the chicken is well seasoned and let it marinate for 30 minutes.
Prepare the vegetables: chop onions, tomatoes, scotch bonnet pepper, potatoes, bell pepper, and scallion.
Heat extra virgin olive oil in a pot over medium heat.
Add the marinated chicken pieces to the pot and pour the marinade over them immediately to prevent browning.
Cover the pot and let the chicken cook for 5 minutes, then rotate the chicken.
Cover and cook for another 5 minutes, then rotate again.
Add barbecue sauce and all the chopped vegetables on top of the chicken.
Pour about half a cup of water into the pot and add 2 tablespoons of brown sugar.
Add more barbecue sauce to taste, cover the pot, and let it simmer for 30 minutes.
Cut the bammy into eight pieces.
After 30 minutes, add the bammy to the pot, ensuring it soaks up the chicken juices.
Cover the pot tightly and let the bammy steam for about 30 minutes until the gravy thickens.
