Cook the pumpkin for 15-20 minutes until tender.
In a mixing bowl, beat the eggs.
Add the sugar and salt to the eggs and continue beating.
Pour in the anise and mix a few turns.
Add the flour and stir until moistened, do not worry about lumps.
Once the pumpkin is cooked, drain it and press to remove excess water.
Add the pumpkin to the dough mixture and crush and stir until well combined.
Add the raising agent and stir again.
Cover the dough with plastic film and let it rest for 30 minutes.
After resting, degas the dough slightly.
Heat oil to around 140 degrees Celsius for frying.
Using two spoons, drop portions of dough into the hot oil, ensuring they sink before rising, indicating proper temperature.
Fry until golden brown, then remove and drain on absorbent paper.
Immediately sprinkle with sugar and cinnamon.
