Amish Egg Noodles

Cultural Context

Amish egg noodles are a cherished staple in Pennsylvania Dutch cuisine, reflecting the simplicity and resourcefulness of Amish cooking. Traditionally made from just a few ingredients, these noodles are often served with hearty dishes or in soups, embodying the comfort of home-cooked meals. Today, they are enjoyed beyond the Amish community, with many families embracing homemade pasta as a way to connect with culinary traditions.

1

Add 2 cups of flour to a bowl.

2

Add 2 teaspoons of sea salt to the flour and mix it up a little.

3

Crack one whole egg into the flour mixture.

4

Crack the other three eggs into a separate bowl, scoop out the yolks, and add them to the flour mixture.

5

Turn on the mixer to level one and start mixing the ingredients.

6

Slowly add about half of the 1/2 cup of water while mixing for about five minutes.

7

Check the dough; if it's too dry, add more water. If it's too sticky, add a little flour.

8

Once the dough forms a nice ball, set it aside and let it rest for about 10 minutes.

9

After resting, split the dough into 4 smaller pieces and let them rest under a bowl for another 5-10 minutes.

10

Flour the surface and roll out one of the dough balls with a rolling pin to a thickness of about 1/4 to 1/8 inch.

11

Use a pizza cutter to slice the rolled dough into noodle shapes, making them chunky or uneven as preferred.

12

Lift the sliced noodles onto a cookie sheet to dry, or you can cook them immediately.

13

To cook, add the noodles to boiling water and cook until they float, checking for doneness to your taste.
