Chop the onion and sauté in vegetable oil.
Add salt and pepper.
Add chopped spinach.
Add ricotta and mix well.
Melt butter over medium heat.
Add flour and mix until smooth.
Gradually pour in milk, stirring constantly.
Add salt, pepper, and nutmeg.
Stir in Parmesan, continue to stir until thickened.
Pour a small amount of sauce on the bottom of the baking dish.
Fill the cannelloni with spinach and ricotta mixture, place in the dish.
Pour sauce on top and sprinkle with Parmesan.
Add a second layer of cannelloni.
Pour the remaining sauce, sprinkle with Parmesan and Mozzarella.
Bake in a preheated oven at 180°C (350°F) for 25-30 minutes.
