In a mixing bowl, add 15 grams of dry yeast, 1 cup minus a little milk, 1 cup minus a little water, and 1 tablespoon of sugar. Mix and let it activate for 10 minutes with the lid covered.
Crack 3 eggs into the mixture.
Add 5 cups of flour and 1 teaspoon of salt to the bowl.
Knead the dough using a machine or by hand.
After kneading a bit, add 340 grams of softened butter and continue kneading on low speed until fully incorporated.
The dough will be sticky. Cover and let it rise for about 1 hour.
Once risen, knead again to release the gas.
Transfer the dough to a surface and divide it into 10 equal pieces, shaping each into a bun.
Place the shaped buns on a baking sheet lined with parchment paper, pressing down lightly on each.
Cover with a cloth and let rise for another 20 minutes.
Brush the tops of the buns with egg yolk and sprinkle with sesame seeds and black cumin seeds.
Bake in a preheated fan oven at 180°C (356°F) for about 20 minutes until golden brown.
