1

Heat a nonstick pan over high heat for few minutes.

2

Chop the mozzarella cheese in little chunks, place them between two paper towels to absorb the mozzarella water excess.

3

Halve the tomatoes, place them in a little bowl and season with some extra virgin olive oil. Chop the garlic, add it to the tomatoes and combine.

4

Grill both sides of the tomatoes in the hot pan for about 1 or 2 minutes, then place the tomatoes in the little bowl and salt them.

5

Slice the whole grain bread.

6

Prepare the sandwich: on the top of a bread slice, place some mozzarella cheese, 4 halves roasted tomatoes, 6 black olives halves, 2 or 3 big basil leaves and some extra mozzarella. Top with the other side of bread and press it using your hands.

7

Place the sandwiches on the hot nonstick pan and grill over medium heat until the bottom is golden brown and the cheese starts to melt (for about 4-5 minutes). Flip and grill the other side until crispy golden brown (for about 4 minutes).

8

Serve immediately.
