Place the peas into a muslin cloth along with 2 roughly chopped onions.

Put the muslin cloth with peas and onions into a large pot with the gammon.

Add cauliflower leaves, cabbage leaves, carrot peelings, and onion skins for flavor.

Cover the gammon with water and add enough full fat Coca-Cola to ensure it's covered.

Bring the pot to a boil, then simmer slightly less than a simmer for 2 hours and 20 minutes, cooking for 20 minutes per 500 grams of gammon.

Remove the gammon from the pot half an hour before it's fully cooked to braise it in port.

Glaze the gammon after removing the netting and skin, leaving most of the fat on.
