Grate 6 ounces of salvadorian cheese.
In a bowl, add 4 eggs and granulated sugar, then add salvadorian sour cream and milk.
Use a hand mixer to incorporate the wet ingredients for 2-3 minutes until pale.
Sift in rice flour and baking powder, then mix into the wet ingredients until smooth.
Fold in the grated cheese with a spatula until well combined.
Prepare the baking dish with homemade nonstick baking cream.
Divide the mixture between two baking dishes and sprinkle sesame seeds on top.
Preheat the oven to 350°F (175°C).
Bake for 40 minutes without opening the oven.
Check for doneness with a toothpick; it should come out clean.
Let the quesadilla bread rest for 5-10 minutes before serving.
