Combine 1 cup of butter and 1 cup of sugar in a bowl and cream them together until fluffy.
Add 1 cup of crema or sour cream to the butter and sugar mixture and mix for a few seconds.
Add 3 eggs to the mixture, scraping the sides to ensure everything is combined.
Fold in 1 cup of cheese, either Mexican cheese or Parmesan, mixing gently to avoid breaking down the cheese too much.
Add 1 cup of rice flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt to the mixture and mix until just combined.
Spray a baking pan with cooking spray to prevent sticking.
Use an ice cream scooper to portion the batter into the prepared baking pan.
Sprinkle 1 to 3 tablespoons of sesame seeds on top of the batter according to preference.
Preheat the oven to 350°F (175°C) and then lower the temperature to 325°F (163°C) once the batter is in the oven.
Bake for 30 minutes, rotating the pans halfway through for even baking.
