Instructions

  1. 1Peel and wash cassava thoroughly.
  2. 2Grate the cassava using a box grater or food processor.
  3. 3Place grated cassava in a clean cloth and squeeze out excess moisture.
  4. 4In a bowl, combine grated cassava, salt, and lime juice.
  5. 5Mix until well combined and form into flat, round discs.
  6. 6Heat oil in a skillet over medium heat until shimmering.

  • 2 whole fish (snapper or tilapia), cleaned and scaled
  • 1 cup okra, sliced
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lime, juiced
  • 1/2 cup vegetable broth
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large bowl, combine the sliced okra, olive oil, onion, garlic, thyme, paprika, salt, black pepper, and cayenne pepper (if using). Mix well to coat the okra evenly.
