American French Onion Soup

French onion soup has its roots in ancient Roman times but became popular in France in the 18th century. The American version often includes a richer broth and is topped with melted cheese, reflecting American tastes for hearty, comforting dishes. It is commonly served in restaurants and homes alike, especially during colder months.

Vegetable broth is lower in calories and chicken broth is typically less expensive.
Melt 4 tablespoons of butter or margarine in a non-stick 12-inch skillet over medium low heat.
Thinly slice 6 medium onions and add them to the skillet with 1/4 teaspoon of salt.
Cook the onions until very tender and beginning to caramelize for about 45 minutes.
Reduce the heat to low and cook, stirring frequently, until the onions are deep golden brown for about 15 minutes longer.
Transfer the onions to a Dutch oven or another pot.
Add 4 cups of water and 1 can of beef broth to the Dutch oven along with 1 sprig of fresh thyme.
Heat to boiling over high heat, then reduce the heat and simmer for 30 minutes.
Preheat the oven to 450°F.
Arrange French bread slices on a cookie sheet and bake until lightly toasted for about 5 minutes.
Place oven-proof bowls on a baking pan and spoon the soup evenly into the bowls.
Top the soup with the toasted bread, slightly pressing the bread into the soup, then sprinkle gruyère cheese evenly on top of the bread.
Bake the soup until the cheese has melted and begins to brown for about 12 to 15 minutes.
