Heat the slow cooker on high.

Add 1/4 cup unsalted butter to the slow cooker and let it melt.

Add 2 lbs of sliced sweet onions to the slow cooker.

Cover and cook the onions on high for 6 hours to caramelize them.

After 6 hours, stir in the beef broth, white wine, thyme, bay leaf, salt, and pepper.

Cover and cook for an additional 2 hours on low.

Remove the bay leaf before serving.

Ladle the soup into bowls.

Top with sliced baguette and gruyère cheese.

Broil the bowls in the oven until the cheese is bubbly and golden.

Serve hot.
