1

Scoop out the pulp from fresh passion fruits and strain the juice away from the seeds using a big strainer.

2

You need 1/2 cup of passion fruit juice for the recipe.

3

Separate 8 egg yolks from the egg whites, saving the egg whites for later use.

4

Measure out 2/3 cup of sugar and blend it into the egg yolks until consistent.

5

In a saucepan, heat 4 cups of heavy cream until it reaches a boil.

6

At the same time, boil some water for a water bath.

7

Pour the passion fruit juice into the egg and sugar mixture and blend it together.

8

Once the cream has boiled, let it cool slightly before slowly pouring it into the egg mixture while continuously mixing to avoid scrambling the eggs.

9

Transfer the mixture to an easier pouring container and scoop off any froth that forms on top.

10

Fill old tea cups (or ramekins) with the mixture, then place them in a water bath.

11

Bake in the oven at 325°F for about 30 minutes, checking for jiggle; if it jiggles instead of pours, it's done.

12

Remove from the oven and let them cool, taking them out of the water bath.

13

Sprinkle sugar on top of the cooled crème brûlée for the sugar crust.

14

Using a kitchen torch or a special heating tool, caramelize the sugar slowly to avoid burning it.

15

Once caramelized, add a few passion fruit seeds on top for crunch and serve.
