Separate 6 eggs.

Add 0.5 teaspoon of salt to the egg whites and beat until stiff.

Add 180 grams of sugar to the egg yolks and 1 splash of vanilla flavor; beat for 4 minutes.

Add a third of the egg whites to the yolks and mix gently.

Sift 180 grams of flour into the mixture in three parts, mixing gently each time until no visible flour remains.

Prepare a 20 cm diameter and 10 cm high mold with baking paper only on the bottom; do not grease.

Bake at 180º C for 15 minutes with heat from above and below, then another 15 minutes with heat only from below.

Let the cake cool on a rack for an hour.

Carefully remove the cake from the mold and pierce it to absorb the milk better.

For the milk mixture, combine 400 grams of condensed milk, 300 ml of regular milk, 350 ml of evaporated milk, and a splash of vanilla flavor; mix well.

Cut the cake in half.

For the cream cover, beat 125 grams of mascarpone and 200 ml of cold whipping cream until you start to see trails; then add 50 grams of icing sugar and a splash of vanilla flavor and beat completely.

Pipe cream on the plate to fix the cake in place, then place the first layer of cake on the plate.

Pipe cream around the base to prevent milk from leaking out, then pierce the cake and pour half of the milk mixture slowly on top.

Pierce the other half of the cake and repeat the process with the remaining milk mixture.

Fill with pastry cream (link in description), pipe cream around the edge to prevent it from leaking out, and place the other half of the cake on top.
