Dried herbs provide flavor without the cost of fresh.
Peel potatoes and cut them into approximately 3 cm (1 and 1/4 inch) pieces.
Rinse the cut potatoes in cold water to remove starch.
Dry the potatoes with kitchen paper or a towel.
In a bowl, add half of the sunflower oil (15 mL or 1 tablespoon) and a pinch of sea salt to the potatoes and toss until coated.
Preheat the air fryer to 200°C (390°F) for 3 minutes.
Place the potatoes in the air fryer basket and set the temperature to 200°C (390°F) for 20 minutes, reducing the temperature to 180°C (355°F) after 10 minutes.
Shake the basket every 5 minutes to ensure even cooking.
After 10 minutes, add the second tablespoon of sunflower oil and shake again.
After 20 minutes, remove the potatoes and let them sit for a minute on kitchen paper.
Add chopped parsley, sea salt, and black pepper to the potatoes and toss with herbs before serving.
