Steak has long been a staple of American cuisine, particularly in regions known for cattle ranching. The preference for rare steak reflects a cultural appreciation for high-quality beef, where the natural flavors and tenderness are celebrated. Today, rare steak is enjoyed in steakhouses and homes alike, with various cuts and cooking methods gaining popularity.

- ●fresh thyme
Instructions
- 1Remove steak from the refrigerator and let it rest at room temperature for 30 minutes.
- 2Preheat a cast-iron skillet over high heat until smoking hot.
- 3Pat the steak dry with paper towels and season generously with salt and black pepper on both sides.
- 4Add olive oil to the skillet and swirl to coat the bottom.
- 5Place the steak in the skillet and sear for 2-3 minutes without moving it.
- 6Flip the steak and add butter, garlic, and thyme to the skillet.
- 7Baste the steak with the melted butter and aromatics for another 2-3 minutes.
- 8Use a meat thermometer to check the internal temperature; it should read 120-125°F for rare.
- 9Remove the steak from the skillet and tent loosely with foil.
- 10Let the steak rest for 5-10 minutes before slicing.

- 7If desired, add butter on top of the steaks during the last minute of cooking for extra flavor.
- 8Remove the steaks from the heat and let them rest for 5 minutes before slicing.
- 9Serve with your choice of sides.
