1/3 cup aquafaba
1/2 cup tahini
juice of 2 lemons
1 teaspoon cumin
1/2 teaspoon salt
3 to 4 zucchini
8 ounces small balls of mozzarella
8 ounces cherry or grape tomatoes
2 tablespoons pine nuts
1/4 cup raw cashews
1 packed cup basil leaves
1 teaspoon lemon juice
1 handful baby arugula
2 boneless skinless chicken breasts

Slice and dice one large cucumber and add to a large mixing bowl.

Stir the salad mixture and add a portion to your bento box.
