1 whole fish (such as snapper or trout), cleaned and scaled

1 lemon, sliced
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh herbs (such as parsley or thyme), chopped

Preheat the oven to 400°F (200°C).

Rinse the fish under cold water and pat dry with paper towels.

Place the fish on a large piece of aluminum foil or a baking dish.

Drizzle olive oil over the fish, rubbing it into the skin and inside the cavity.

Season the fish with salt and black pepper, both inside and out.

Stuff the cavity of the fish with lemon slices, minced garlic, and fresh herbs.

Wrap the fish in the foil or cover the baking dish with foil to keep it moist during cooking.

Place the fish in the preheated oven and roast for 20-25 minutes, or until the flesh is opaque and flakes easily with a fork.
