Peel the sweet potatoes carefully using a paring knife or potato peeler.
Rinse the peeled sweet potatoes and pat them dry with a paper towel.
Cut the sweet potatoes into small circles, not too thin or too thick.
In a medium-sized pot, add 2 tablespoons of water to prevent sticking.
Layer half of the sweet potatoes in the pot.
Sprinkle half of the brown sugar, white sugar, and a pinch of salt over the first layer of sweet potatoes.
Add the remaining sweet potatoes on top of the first layer.
Sprinkle the rest of the brown sugar, white sugar, salt, vanilla, and cinnamon over the second layer.
Cover the pot with the lid cracked open to allow steam to escape.
Cook on medium-low heat for about 10 to 12 minutes until the bottom half is tender.
After 10 to 12 minutes, remove the lid and flip the top sweet potatoes down into the sugar mixture.
Let them cook for another 10 to 12 minutes until tender and bubbly.
Once tender, remove the pot from heat and let the sugar settle.
Add butter on top of the sweet potatoes and cover with the lid to let it melt into the mixture.
