Its roots trace back to the Ottoman Empire, showcasing layers of eggplant, meat, and béchamel sauce, reflecting the region's rich culinary history. Today, moussaka is enjoyed in various forms across the Mediterranean, with each culture adding its unique twist.

Rinse 1 cup of lentils and set aside in 1 cup of water.
Prepare the vegetables: core and slice 1 zucchini lengthwise, then dice it.
Slice 2 tomatoes down the middle and cut into large chunks.
Dice 1 onion, taking off the tops and slicing it thickly.
Heat olive oil in a skillet and add the diced onion, cooking until it starts to brown.
Add the diced zucchini and tomatoes to the skillet with the onions.
Dice 1 potato into small pieces and add it to the skillet, stirring to combine.
Season the mixture with 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 3/4 teaspoon of allspice, 1 tablespoon of salt, and 1 tablespoon of black pepper.
Add 1 teaspoon of granulated garlic and stir everything together.
Once the vegetables have cooked down, add the rinsed lentils and the 1 cup of water, plus 2 more cups of water for a total of 3 cups.
Bring the mixture to a boil, then lower the heat to a simmer and cover partially.
Let the lentils simmer for 15-20 minutes until they are tender.
While the lentils are cooking, prepare the topping: bring 5 cups of water to a boil for the pasta.
Add 1 teaspoon of garlic granulated and 1 teaspoon of smoked paprika to the boiling water.
Add 3 tablespoons of nutritional yeast mixed with garlic and herbs to the boiling water.
Prepare 1 lemon for serving.
