Italian Garlic Soup

leek – 14 oz | 400 g
bulb onion – 5 oz | 150 g
potato – 12 oz / 350 g
chicken broth – 6 cup | 1500 ml
dried thyme – ½ tsp
cream 33% - ½ cup | 125 ml
bread – 6 slices
melted butter – 4 tbsp
vegetable oil – 2 tbsp
fresh parsley – 2 tbsp | 10 g
dried vegetable seasoning – 1 tbsp
ground black pepper – ½ tsp
salt – 1 tsp

Cut the onion into half rings, rinse and cut the leek, peel the garlic and cut into slices, dice the potato and bread and chop up the parsley.

Add the vegetable oil into a stockpot and heat over medium heat, add the onion and leek and fry over medium heat for 5 minutes.

Add 2 tbsp of melted butter and garlic into the stockpot, stir, reduce the heat to low, cover with a lid and simmer for 10 minutes stirring occasionally.

Add the potato, chicken broth, dried thyme, salt, black pepper and dried vegetable seasoning and bring to a boil, cover with the lid and cook over low heat for 20 minutes.

Heat a pan over medium heat, melt 2 tbsp of butter and add the diced bread, fry over low heat for 10 minutes until golden crust stirring occasionally.

Add the cream into the stockpot with soup, stir well, bring to a boil and switch the heat off.

Crush the soup with an immersion blender.

Serve the garlic soup hot with croutons having sprinkled with the chopped fresh parsley.
