10.5 oz (300 g) cooked ham, diced into ½ inch pieces
5 oz (150 g) peas, fresh or frozen
8 fl oz (250 ml) double cream (heavy cream)
2 oz (50ml) white wine (optional)
3.5 oz (100 g) grated Parmesan cheese
1 tbsp olive oil
1/2 tbsp butter
1 sprig thyme
salt and pepper to taste

Bring a large pot of water to a boil, salt it generously, and cook the pasta according to the instructions on the package.

Reserve 250 ml (1 cup) pasta water before draining.

Pour the double cream over the ham and peas mixture and continue to cook for 2-3 minutes until the sauce thickens.

Stir in a bit of pasta water, then transfer the drained pasta (and peas if fresh peas were used) to the pan.
