Candied Carrots

3 large carrots
1/2 cup brown sugar
8 tablespoons butter
1 tablespoon corn starch
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon black pepper
1 teaspoon vanilla extract

Wash the carrots, remove the tops and bottoms, scrape off the outside, and cut them into small slices.

Boil a pot of water and add the sliced carrots, cooking for about 10 minutes.

While the carrots are cooking, melt the butter in a separate pot.

Once the butter is melted, add the brown sugar and then the corn starch, nutmeg, cinnamon, allspice, black pepper, and vanilla extract to make the glaze.

Check the carrots for tenderness using a fork; they should be nice and tender.

Drain the carrots and add them to the glaze, allowing them to cook further to absorb the flavors.
