Candied Carrots

1.5 pounds carrots
1 cup water
4 tablespoons butter
2 tablespoons brown sugar
2 tablespoons honey
3/4 teaspoon salt
finely chopped parsley

Peel 1.5 pounds of carrots.

Cut the carrots into rounds for even cooking.

In a large saucepan, add the sliced carrots and 1 cup of water.

Bring the water to a boil.

Lower the heat to simmer and cook until the carrots are tender, about 8 to 10 minutes.

Drain off any extra water from the saucepan.

With the heat on low, add 4 tablespoons of butter, 2 tablespoons of brown sugar, 2 tablespoons of honey, and 3/4 teaspoon of salt to the saucepan with the carrots.

Mix all the ingredients together.

Cook, stirring occasionally, until the sugar has dissolved and a glaze forms.

Remove from heat and serve garnished with finely chopped parsley.
