In a separate bowl beat the egg whites to moist peaks, and then whip in the remaining 1/2 cup sugar until just mixed.

Beat the egg yolks.

Add the egg yolks, zest, lemon juice, and milk to the dry ingredients.

Immediately pour into dishes.

Add boiling water to the bain-marie and bake for 55 to 60 minutes until golden brown and set.
