Make a rub by mixing together smoked paprika, onion powder, garlic powder, salt, pepper, cayenne pepper, cumin, and brown sugar in a bowl.
Coat the brisket with the rub, pressing down to ensure a nice crust on both sides.
Heat a nonstick pan until smoking hot, add a little oil, and place the brisket in the pan away from you.
Sear the brisket for about 2-3 minutes until aromatic, then carefully flip to sear the other side until a beautiful brown coating forms.
Dump any excess rub into a bowl.
Remove the seared brisket from the pan and set aside.
Cut up jalapenos (leaving the seeds in) and red onions, then add them to the same pan to cook down until browned.
In a bowl, mix the saved rub with beef stock, liquid smoke, apple cider vinegar, and ketchup to create a barbecue base.
Once the vegetables are browned, make space in the pan and add the brisket back in, then pour the barbecue sauce over it.
Cut the heat off, shake the pan to ensure the sauce gets underneath, cover it, and place it in the oven at 350°F for about 2.5 hours.
