Cottage cheese is lower in fat and calories while still providing creaminess.

Cut off the end of the romaine lettuce and thinly slice it.

Transfer the sliced lettuce into a salad bowl.

Cut off the roots of the scallions and thinly slice them, using about four scallions.

Add the sliced scallions to the salad bowl.

Finely chop about 3 to 4 tablespoons of fresh dill and add it to the salad.

Finely chop fresh parsley and mint, then add them to the salad.

For the dressing, combine half red wine vinegar and half lemon juice, using about 2 to 3 tablespoons total.

Add about 1/4 cup of olive oil and a pinch of salt to the dressing and whisk together.

Pour the dressing over the salad and mix everything together until covered in dressing.
