Cottage cheese is lower in fat and calories while still providing creaminess.

Finely slice Green Onions, about ¼ inch thick.

Finely chop some Dill.

Optionally, chop some Parsley for added flavor.

In a bowl, combine ¼ cup of Extra Virgin Olive Oil, 1 clove of Garlic (minced), Salt, and Pepper.

Add the juice of 2 tablespoons of fresh squeezed Lemon to the dressing mixture.

Shake the dressing mixture to combine well.

Toss the sliced Green Onions, Dill, and Parsley together in a bowl.

Pour the dressing over the salad ingredients and toss to combine.

Crumble 4 oz (100g) of Greek Feta on top of the salad.

Serve with Grilled Prawns on the side.
