In a large bowl, mix all the ingredients gently, except for the reserved thyme branches for garnish. Generously season with salt and pepper. Remove the sausage fricassée from the oven, garnish with the reserved thyme branches, and serve immediately, accompanied by a demi-glace of roasted vegetables if desired.
