This dish is commonly served with rice and beans, making it a staple in Dominican households. Today, variations of this stew can be found throughout Latin America, each with its own regional twist.

Clean chicken with vinegar and lime juice and make slits in the chicken.
Add 4 tablespoons of sofrito to the chicken.
Add 3 tablespoons of Worcestershire sauce and 1 tablespoon of soy sauce to the chicken.
Add a pinch of ground black pepper and 1 tablespoon of salt or to taste.
Add 1 packet of Sazon Goya and mix well to coat the chicken.
Heat half a tablespoon of brown sugar in a pan until it caramelizes.
Add the chicken to the pan once the sugar has caramelized and cook for about 6-8 minutes on medium-high heat.
Flip the chicken to cook the other side for an additional 8 minutes on medium-high heat.
Add the red bell peppers, onions, and cilantro to the pan along with the juice used to season the chicken.
Add 1.5 cups of water and 0.5 cup of pasta sauce to the pan and mix gently.
Cover the pan and cook for about 45-50 minutes, checking at 25 minutes to ensure there is enough liquid and adding more water if necessary.
After 45-50 minutes, check that the chicken is cooked through and serve with white rice, Dominican stewed beans, and a side salad.
