Preheat the oven to 375 degrees.

Peel, core and slice 2 of the apples into very thin pieces and set aside in a bowl.

With the remaining 4 apples, slice off the tops, flip over and slice the bottoms off just to make the apples stand up, but not cutting all the way into the core.

Using a pairing knife and a spoon, hollow out the apples, leaving an inch on the bottom as the base.

Remove the core from the inside flesh, slice it into thin pieces and add to the bowl with the other sliced apples.

To the bowl of sliced apples, add the sugars, flour, salt, black pepper and lemon zest. Mix well and fill the hollowed apples with this mixture. Top each apple with some cheese.

Roll out the pie crust and cut 4 even pieces to top the apples, creating whatever pattern on top of the apple you would like.

Make a few incisions on top of the crust to form a vent. Brush each pie with the egg wash.

Place the apples in a baking dish and pour just enough wine in to cover the bottom of the dish.

Cover the dish with foil, making sure to not touch the tops of the apples and bake for 25 minutes.

Remove the foil and continue baking for another 15 minutes or until the crust is golden brown and the apples are soft.
