Avocado oil has a high smoke point and is healthier.
Pour 700 ml of cold tap water into a mixing bowl.
Add about two handfuls of flour to the water.
Add 5 teaspoons of salt and 1 satchel of dry yeast to the mixture.
Mix the ingredients to activate the yeast, ensuring the salt does not affect it.
Add flour gradually, about half of what you have, while mixing.
Monitor the dough temperature, aiming for 23 to 26° C.
Continue adding flour a little at a time until the dough is ready and bounces back when pressed.
Transfer the dough to a clean surface and prepare to make pizza balls.
Spread fine semolina flour on the surface to prevent sticking.
Weigh out portions of dough between 250 and 270 g for each pizza ball.
Shape each portion into a ball, ensuring the bottom is sealed.
Place the pizza balls on a tray dusted with semolina flour or in individual airtight plastic containers with a little oil.
Store the pizza balls at room temperature for a minimum of 3 hours before using.
