1

Whisk warm water, yeast, and sugar in the bowl of a stand mixer or large mixing bowl.

2

Let the yeast proof for 5 to 10 minutes until foamy and frothy on top.

3

Add olive oil, salt, and flour to the yeast mixture.

4

Attach the dough hook and mix on low speed for about 2 minutes until combined.

5

If mixing by hand, use a wooden spoon or silicone spatula.

6

Have extra flour on hand; if the dough is sticky, add flour one teaspoon at a time until it no longer sticks to the bowl.

7

Knead the dough for about 5 minutes until soft and stretchy, either in the mixer or by hand on a lightly floured surface.

8

To check if the dough is ready, poke it with your finger; it should bounce back without sticking.

9

Grease a large bowl with olive oil and turn the dough to coat all sides.

10

Cover the dough and let it rise until doubled in size, about 60 to 90 minutes.

11

Preheat the oven to 475°F (246°C).

12

Uncover the dough and punch it down lightly to deflate it.

13

Lightly flour a work surface and divide the dough in half.

14

Shape one half into a disc and set it aside.

15

Lightly oil a pizza pan using a pastry brush and sprinkle cornmeal on top.

16

Flatten and shape the pizza dough on the prepared pizza pan using your hands.

17

If the dough resists, cover it and let it rest for 5 to 10 minutes.

18

Press the dough out to create the edge of the crust.

19

Lightly cover the crust and set it aside while preparing toppings.

20

Brush the surface with olive oil and create dimples in the dough to prevent air bubbles.

21

Add fresh garlic on top (optional) and any Italian seasoning if desired.

22

Spread 1/2 cup of pizza sauce over the dough and top with 2 cups of shredded mozzarella.

23

Add any additional toppings as desired.

24

Bake in the preheated oven for 13 to 15 minutes.

25

Add fresh basil and red pepper flakes after baking.
