Vegetable oil is less expensive and can be used for grilling.
Heat olive oil in a pan.
Add garlic and herbs de Provence to the oil and allow them to bloom until the garlic turns golden, then remove from heat.
Separate the infused oil from the garlic and herbs de Provence for later use.
Boil two quarts of water with a half teaspoon of baking soda to soften the potatoes.
Add potatoes to the boiling water and cook until tender.
Prepare the savory lemon sauce by making a roux with equal parts butter and flour, cooking until it no longer tastes like flour and has a nutty aroma.
Add fresh lemon juice and low-sodium vegetable stock to the roux.
Include fresh lemon zest and more herbs de Provence to the sauce and simmer until it thickens enough to coat the back of a spoon.
Once the potatoes are boiled, mix them with the infused oil until a mashed potato-like paste forms.
Grill the potatoes, rotating them to achieve grill marks, until they are crispy and golden on both sides.
Toss the grilled potatoes with the reserved garlic and herbs de Provence while still hot, and season with salt to taste.
