Insert a temperature probe into the steak and smoke at 250°F until it reaches an internal temperature of 160°F, approximately 1 hour and 40 minutes.

If the temperature stalls, increase the grill temperature to 300°F to reach 160°F.

Wrap the steak in butcher paper and return it to the smoker, increasing the temperature to 300°F to bring the internal temperature up to 195-200°F.

Remove the steak from the smoker and let it rest wrapped for about 10 minutes.
