Beat eggs in a bowl until well mixed.
Add sugar, mirin, soy sauce, and salt to the eggs, mixing until combined.
Stir in fish paste and dashi until smooth.
Heat a non-stick skillet over medium heat and lightly oil it.
Pour a thin layer of the egg mixture into the skillet, swirling to cover the bottom.
Cook until the edges set but the center remains slightly runny, about 2-3 minutes.
Using a spatula, roll the cooked egg from one side to the other, creating a log shape.
Push the rolled omelet to one side of the skillet and add more egg mixture to the empty side.
Repeat the process, rolling the new layer around the existing roll, until all mixture is used.
Remove the datemaki from the skillet and let it cool slightly.
Slice into thick pieces and serve warm or at room temperature.
