Originating from the need for quick, high-heat cooking methods, this technique allows for a beautifully caramelized crust while keeping the inside tender and juicy. Lean cuts provide lower fat content while pork chops are often less expensive.
Choose a steak with good marbling, at least one inch thick.
Bring steak to room temperature.
Peel garlic by rolling it between hands.
Season the steak generously with salt and black pepper on all sides.
Coat the steak with a little neutral oil.
Preheat a cast iron pan over 400 degrees Fahrenheit.
Place the fat cap of the steak down in the pan and press it flat to render fat.
Sear the steak without moving it for a few minutes until a crust forms.
Flip the steak to sear the other side until golden brown.
Add garlic, rosemary, thyme, and about half a stick of butter to the pan.
Spoon the melted butter over the steak to infuse flavor.
Check the internal temperature with a meat thermometer, aiming for 120-125 degrees Fahrenheit.
Let the steak rest for at least 10 minutes before slicing.
Slice the steak into pieces between a quarter inch to a half inch thick.
Fan out the sliced pieces for presentation and garnish with rosemary and a sprinkle of salt.
