Add 1/2 tsp of salt to 250 gr of all-purpose flour and mix.

Make a hole in the center of the flour and add 30 gr of light olive oil.

Add 125 ml of warm water gradually and 1/4 tsp of vinegar, mixing with a spatula to shape the dough.

Knead the dough for about 5 minutes until it looks soft and slightly sticky.

Divide the dough into two pieces and shape into balls, brushing with a bit of oil or covering with a damp cloth.

Let the dough rest for about 30 minutes.

Take one piece of dough, sprinkle flour on a clean surface, and stretch it using a rolling pin until thin like a tortilla.

Place the stretched dough on a greased and floured baking tray, stretching it until it looks transparent.

Add 150 gr of cream cheese, 50 gr of brie cheese, and 50 gr of gorgonzola cheese on top of the stretched dough, along with slices of ham if desired.

Stretch the second piece of dough similarly and place it on top of the filling, sealing the edges by pressing with fingers and rolling pin.

Make holes in the surface of the dough and sprinkle with olive oil, salt, and a bit of dry thyme.

Preheat the oven to the highest temperature (230°C) and bake for about 10 to 15 minutes, starting on the lower rack for 5 minutes before moving to the middle or upper rack.
