Carbonara Quiches

115 grammes fresh spaghetti
75g chopped asparagus
2 rashers smoked back bacon
3 beaten eggs
150g fat-free natural cottage cheese
½ tsp garlic granules
25g frozen peas
2 level tbsp freshly grated Parmesan

Roughly chop 115 grammes of fresh spaghetti.

Cook spaghetti according to pack instructions and drain well.

Mix 75g chopped asparagus, 2 rashers of smoked back bacon (with all visible fat removed), and 3 beaten eggs in a bowl.

Add 150g of fat-free natural cottage cheese, ½ tsp garlic granules, 25g frozen peas, and the cooked spaghetti to the mixture.

Stir in 2 level tbsp freshly grated Parmesan, season, and mix well.

Divide the mixture into 6 and pour into a non-stick muffin tin.

Bake at 200°C (fan 180°C, gas mark 6) for 25-30 minutes or until the eggs are set and the top is golden.

Leave to cool and sprinkle over some fresh chopped chives.

Store in an airtight container for up to 2 days.
