Peel and wash the corn.
Grate the corn and set it aside.
Grate the zucchini and set it aside.
Chop the onion and red bell pepper into small cubes.
Chop the tomato and optionally boil it to make it easier to chop.
In a deep pan, add a splash of oil and sauté the chopped vegetables for about 10 minutes.
Season the vegetables with 1 tablespoon of salt, 1 tablespoon of paprika, and 1 teaspoon of black pepper.
Once the vegetables start cooking, add the grated corn and mix well.
After 5 minutes, add the grated zucchini to the mixture without adding water.
Cook for 30-35 minutes, stirring every 5 minutes to prevent sticking.
Serve the humita hot with creamy cheese on top.
