Slice 3 pounds of pickling cucumbers into about a quarter inch thick pieces.

In an enamel coated roasting pan, combine 2 2/3 cups of brown sugar, 1 cup of apple cider vinegar, 3 cups of white vinegar, 2 tablespoons of mustard seed, 1 teaspoon of turmeric, 1 teaspoon of cloves, 1 teaspoon of peppercorns, and 1 teaspoon of celery seed.

Bring the mixture to a simmer.

Add the cucumber and onion mixture to the simmering brine and stir gently.

Simmer just enough to mingle the flavors without overcooking.

Transfer the pickles into jars using a slotted spoon.

Pour the brine over the pickles in the jars, using a spoon to remove air bubbles.
