Clean mushrooms using a damp paper towel or a brand new toothbrush, avoiding running them under water to prevent them from soaking up water.
Prepare the batter by mixing 3/4 cup all-purpose flour, 1/2 cup corn starch, 2 teaspoons baking powder, a pinch of salt, and black pepper in a bowl.
Add 1 large egg, 1/2 cup cold water, and 2 tablespoons cold water to the dry ingredients and whisk until combined.
Let the batter sit for 7 to 10 minutes to allow the baking powder to activate.
Heat vegetable oil in a pan over medium to medium-high heat, ensuring it doesn't get too hot to avoid burning the mushrooms.
Trim any long stems off the mushrooms, saving them if desired, and then dip the mushrooms into the batter, ensuring they are well-coated.
Once the oil is hot enough (indicated by a sizzle when a test piece is added), gently place the battered mushrooms into the oil without overcrowding.
Fry the mushrooms until they are golden brown and crispy, monitoring them closely to avoid burning.
Remove the fried mushrooms and place them on a cooling rack with a cookie sheet underneath to drain excess oil.
Garnish with parsley flakes and serve with dipping sauce such as ketchup and ranch.
