Argentine Matambre

Cultural Context

Matambre, a traditional Argentine dish, showcases the country's love for grilled meats. Originating from the Spanish word for 'to kill,' it reflects the resourcefulness of gauchos who used the flank cut to create hearty meals. Often served at asado gatherings, matambre is celebrated for its rich flavors and communal spirit. Variations exist across South America, but the Argentine style remains the most renowned, often featuring vibrant vegetable stuffing and cheese.
