60 mls water
4 medium tomatoes
4 small cucumbers

Finely grind 50 grams of walnuts in a food processor, mortar and pestle, or by bashing in a bag.

Add the ground walnuts to a small bowl.

Grate in 2 cloves of garlic.

Pour in 30 mls of white wine vinegar and 60 mls of water.

Season generously with salt and pepper, then mix together and set aside.

Cut 4 medium tomatoes into bite-sized pieces.

Peel and slice 4 small cucumbers into equally sized pieces.

Thinly slice half a medium red onion, removing the root end and slicing from pole to pole.

Add a healthy amount of fresh cilantro and torn red basil leaves if available (using cilantro only in this case).

Drizzle the dressing over the salad and toss to combine.
