Canola oil is a cost-effective cooking oil.
Peel and chop sweet potatoes into large pieces and place them in a large pot.
Cover the sweet potatoes with water and bring to a boil.
Cook sweet potatoes for about 15 to 20 minutes until fork-tender.
In a small pot, add 1 cup of nondairy milk and 1 cup of full-fat coconut milk, and bring to a simmer for about 10 minutes.
Smash 6 cloves of garlic and add them to the milk mixture.
Drain the cooked sweet potatoes and return them to the pot.
Mash the sweet potatoes with no added ingredients initially.
Pour about half of the garlic-milk mixture into the mashed potatoes and continue mashing, adding more to taste if desired.
Season the mashed potatoes with salt and taste for seasoning.
Set the mashed potatoes aside.
In a large skillet over medium-high heat, add 1 tablespoon of olive oil.
Add chopped onion, 2 cloves of garlic, 2 carrots, and 16 ounces of mushrooms to the skillet and sauté for about 5 to 8 minutes until golden and reduced.
Remove the sautéed vegetables from the skillet and set aside.
Return the skillet to the heat and add 1.5 cups of brown lentils and 3 cups of vegetable broth.
Cover the lentils and bring them to a simmer, cooking for about 25 to 30 minutes until tender.
Once cooked, add the sautéed vegetables back to the lentils along with 1 cup of frozen peas, 1/4 cup of barbecue sauce, and 2 tablespoons of soy sauce.
Mix everything together until heated through.
Scoop the lentil mixture into a baking dish and smooth it out.
Scoop the mashed potatoes on top of the lentil mixture and smooth them out, creating a decorative pattern if desired.
Preheat the oven to 425°F (220°C).
Bake the shepherd's pie for about 10 to 15 minutes until hot throughout and slightly browned on the edges.
