Preheat the oven to 200°C (about 400°F).

Cut the pumpkin into chunks and season with salt and pepper; roast in the oven for 30-40 minutes.

Peel and cut 5 small potatoes (or 3 large potatoes) in half and place them into boiling water.

Once boiling, reduce heat and simmer the potatoes for 20-30 minutes.

Chop 1 onion, 3 cloves of garlic, 2 large carrots, 1/3 leek, and 150-200 grams of mushrooms finely.

In a skillet, heat garlic olive oil and sauté the onions and garlic until fragrant.

Add the chopped leek and sauté until cooked through.

Add the carrots and mushrooms, and sauté until softened.

Mix 4 cups of stock powder with boiling water to prepare stock.

Add 1.5 cups of lentils to the pan with the sautéed vegetables.

Stir in 2 teaspoons of dried thyme, 1 teaspoon of rosemary, salt, and pepper to taste.

Add 2 tablespoons of balsamic vinegar and stir through; let cook for 20-30 minutes on medium heat.

Once the potatoes are done, strain the water and mash them using a potato masher or fork.

Add 2-3 tablespoons of Nuttelex to the mashed potatoes, along with salt and pepper to taste.

Add 1/4 to 1/3 cup of oat milk to the mashed potatoes until the desired texture is achieved.

Once the pumpkin is caramelized, remove it from the oven and mash it with the same masher; season with salt and pepper.

Optionally, add cumin, nutmeg, and cinnamon to the pumpkin mash and mix well.

After 30 minutes, add 3/4 cup of frozen peas to the lentil mixture and stir through.

If there's excess liquid in the lentil mixture, remove some and stir in 1 teaspoon of arrowroot flour to thicken.

Pour the lentil mixture into a large oven-safe dish and layer the pumpkin mash on top, spreading it evenly.
