Ground turkey is leaner, while ground pork is often less expensive.

Slice zucchini lengthwise into thin strips.

Sprinkle salt on zucchini slices and let sit for 20 minutes to draw out moisture.

Preheat oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat.

Add chopped onion and bell pepper; sauté until softened, about 5 minutes.

Stir in minced garlic and cook for 1 minute until fragrant.

Add ground beef to the skillet; cook until browned, breaking it apart, about 6-8 minutes.

Mix in canned tomatoes, tomato paste, basil, oregano, salt, and black pepper; simmer for 10 minutes.

In a bowl, combine beaten egg, mozzarella cheese, and half the parmesan cheese; mix well.

Layer zucchini slices in a baking dish, followed by a layer of meat sauce, then cheese mixture; repeat layers, finishing with zucchini and remaining cheese on top.

Cover with foil and bake for 30 minutes.

Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.

Let rest for 10 minutes before slicing and serving.
