Season chicken thighs with salt and black pepper on both sides.
Add chicken thighs to the skillet and brown on both sides, about 5-7 minutes each side.
Remove chicken from skillet and set aside.
Add butter to the skillet, then add chopped onion and cook until translucent, about 3-4 minutes.
Stir in minced garlic and cook for an additional minute until fragrant.
Add sliced mushrooms, bell pepper, and carrots; cook until softened, about 5 minutes.
Stir in tomato paste and cook for 2 minutes to deepen flavor.
Pour in white wine, scraping the bottom of the skillet to deglaze.
Add chicken broth, thyme, bay leaves, and return chicken to the skillet.
Bring to a simmer, then cover and reduce heat to low; cook for 30-40 minutes until chicken is tender.
Remove chicken and keep warm; increase heat to reduce sauce for 5-10 minutes if needed.
Stir in chopped parsley before serving.
Serve chicken with the sauce spooned over the top.
